Stockton's Plum Creek Stables instruction in beginning and intermediate horsemanship, trail ride classes, and - for young children - the Kiddie Corral classes. Lessons can be for groups or for individuals. The stables also often host seasonal events, including hayrides in the fall, and winter rides.

Chatfield State Park serves as the stable's backyard, and the grounds themselves have Western frontier props and storefronts, serving as a perfect backdrop for events. It can host Western-style parties, chuckwagon suppers, and hayrides.

Customized birthday packages for kids and their horse riding friends are available. Guests get to learn to rope, go on a scavenger hunt, have a horse beauty show, play games on horseback; the fee of $200/hour accommodates six partygoers.
